The Women’s Health initiative 725 million dollar study paid for by us for the government clearly shows that a diet low in total fat had no impact on heart disease or strokes even in the long-term.

So what kind of saturated fats are we consuming when we eat meat for instance?

Humans will consume mostly stearic acid, lauric acid and palmitic acid. These three fatty acids make up the majority of the saturated fat in meat, butter, cocoa or whole milk. Stearic acid according to the studies may have a potentially beneficial effect on cholesterol or no effect at all.  It is converted to oleic acid which is the same heart healthy fat found in olive oil.

Lauric acid is the saturated fat that is associated with coconut oil. Lauric acid in many studies has been linked with medicinal properties. It has been shown to raise total cholesterol but it may be because it raises the HDL or good cholesterol.

Palmitic acid has also been painted to be evil yet it can alter the beta cells of the pancreas and suppress the natural appetite and leptin hormone helping you to be less hungry. .
